Kill that first knight there. Put on your souls and drops gear. You'll get about 6k souls per kill with a chance for a sunlight medal and an Ember. A great little farming spot. Lothric castle bonfire was my main spot. There's one of the knights right next to the bonfire. I personally just killed him and went back to the bonfire, but you can run down the hall and kill the other two knights as well if you want.
