Work stations are not needed but sleeping is required.

However, I believe your problem might have been a lack of vertical space for golem spawning, while iron golems are 3 blocks high I believe they need a 4 block high space to spawn in. ... I'm almost kinda curious if the gap from villagers to doors, and radius of the "village", hadn't somehow created an infinite-spawn situation. ...Leaving the spawn area smaller than 16x16 could decrease efficiency though, as the game will select a random location within the 16x16x6 area and test if it can spawn an iron golem there. At the extreme, a spawn attempt can be blocked by a ceiling 12 blocks above where the spawn is attempted. The iron golem often spawns during the mingling period of the day, but also at other times. The spawn location appears to have no relationship to the placement of beds.
